Sunday’s feature: From Ranu’s kitchen, famous Bangladeshi dessert, Ras gulla blogging 101

IMG_1032Today I’m posting our famous dessert recipe and a photograph taken by me. I’m not a seasoned photographer, therefore there will be flaws for which I apologize. I have not practiced enough to make it perfect, sorry.

Recipe for Rasgulla(cheese balls in syrup):

Ingredients:

  1. Whole milk- 2 litres
  2. fresh lemon- 3 squeeze to get the juice , set it aside
  3. plain white flour- 2 tablespoons
  4. soft butter-2 tablespoon
  5. Method:
  6. pour the milk in a round pot with a lid(the lid will be useful later)do not cover, slowly bring the milk to a boil, when it comes to full boil, pour the juice of the three lemons, wait for a few minutes until the milk curdles and cheese is formed. Use cheesecloth to drain the water. When the water is drained completely, squeeze the cloth to make sure all of the water is drained and the cheese is lukewarm. Take the cheese  out of the cheese cloth and put it into a bowl large enough to be able to knead. Add butter and the tablespoons of flour. Mix it in the cheese and knead it. when the cheese is smooth and doesn’t crack, when you try to make into little balls, it is ready. It makes about eighteen balls.
  7. Syrup ingredients:
  8. Water- 6 measuring cups
  9. sugar- three measuring cups
  10. Use the same pot to make syrup, wash the pot thoroughly , pour the water and sugar and place it on the stove top, turn on the heat to medium, when the sugar dissolves turn up the heat to full boil, when the syrup is slightly sticky,put about nine cheese balls to avoid them from rubbing each other, otherwise the balls would break. Cover the boiling cheese balls in syrup at  high heat for five minutes. Turn the heat slightly, continue boiling for ten minutes this time, after fifteen minutes, turn down the heat to medium and leave the cheese balls for twenty minutes more in the syrup. The last  ten minutes turn the heat to simmer. While cooking you must make sure the syrup is not too thick, if it is have some plain boiled water and add it gently. Do not put too much.
  11. After forty five minutes take the cheese balls out gently. At this stage they are very soft, it’s a good idea to wait about five minutes, and then take them out one at a time and place them in a serving bowl, save the  the syrup for the next batch.
  12. Repeat the same method for the remaining cheese balls, when all eighteen are cooked put them in the same serving bowl and pour the remaining syrup over the cheese balls.

Ingredients:

1. Meat(beef) two and a half pound roast,sliced into three-fourths of an inch,size of each piece , length= 3 inches, width= two inches.

2. Onion– 5 medium size, the slices should be same as beef pieces.

3. Potatoes_  5 large, sliced the same as beef  pieces.

4. Tomatoes__6, medium size; sliced same as beef pieces.

5. Yoghurt– 2 cups; plain

6. Oil or Clarified butter– three-fourth cup

7. Whole spices—  a. red dried chillies– 12

b. pepper corn( black pepper) 15 pieces.

c. cloves–12 pieces.

d. whole green cardamom—12

e. cinnamon stick— 6 half inch pieces.

f. bay leaf—6 to 8

8. Ground spices:

a. cumin– 1 tsp.

b. coriander–1  tsp.

Ginger and Garlic– it is best to have them fresh.

1. ginger– 1 inch piece crushed into a paste.

2. garlic–5 cloves, crushed into a paste.

1. Salt– 2 level teaspoon

Mix the the ground spices,fresh garlic and ginger with the yoghurt and put it aside.

Utensil— one five quart round pot with cover.

Method :

Grease bottom of pot with two tablespoons of oil or clarified butter, carefully put the slices of onion,followed by two tablespoons of spiced mixed  yoghurt, three whole chillies,four pepper corns,three whole cloves,three cardamoms,two cinnamon sticks,and two bay leaves  and two tablespoons of oil .Cover this layer with beef and follow the same method as the top layer with the yoghurt,spices , one teaspoon salt and oil. After beef next is potatoes, put  same amount of spices ,oil, yoghurt as on the first layer.The last layer is tomatoes, put the remaining spices,yoghurt,oil and the second teaspoon of salt.

If there is beef, potatoes, onion and tomatoes left, Do the same as in part one but do not use extra spices ,just use less for the part one layers and use them in the second part.

place the pot in a pre-heated oven 350 degrees for approximately an hour. Check after thirty minutes to see everything is working well. turn off the oven and leave the pot for 45 minutes  more. This will help to dry the liquid.

I’m reposting a recipe of mine instead of today’s writing prompt, this will I hope explain why I will not settle for red or blue pill, as a substitute for real food.

Today for NaBloPoMo,I am posting a recipe.I had good success with it.All my friends and family love it.Try it you may like it too!

Bhoona Gosht(Fried beef)

Ingredients:

1. Boneless blade roast—2 pounds

2. Onion—2 medium chopped

3. Fresh garlic—2 cloves, minced

4.Ginger— half inch piece minced

5. Salt—to taste

6. Curry powder—one tablespoon

7. Cayenne powder— one teaspoon

8. Oil for frying— quarter cup, olive oil or canola oil

Method:

Use an oven proof cook pot with lid ( le creuset or something similar).

Heat the pot at medium heat on top of the stove. Pour oil and add the chopped onions. Fry until the onion is transparent.Add all the spices,ginger,garlic,salt, curry powder and ground cayenne. Fry the ingredients for a minute. Add the beef,stir it till all the spices are coated,leave it for five minutes.

Preheat the oven at 350 degrees. Before placing the beef in the oven, cover it with the lid. Bake for an hour. Turn off the oven and leave the beef for an additional hour.

Serve it with rice and an yogurt salad.

Recipe for yogurt salad;

Ingredients:

1. English cucumber—one whole

2. plain yogurt—- 2 cups

3.green onion— half a bunch minced

4. salt —- 2 teaspoons

5. tomato– 1 small (chopped)

6. sugar— 1 teaspoon

7. lemon— half

8. green chilly-  – a small one minced(optional)

Method :

1.shred the cucumber,put the contents in a fine mesh colander,add the salt and leave it for a few minutes . The salt will squeeze out the water in the cucumber.If necessary squeeze the remaining water with your hand.

2. Add minced tomato,onion and green minced chilly if you want it slightly spicy. Mix it with a spoon.

3.Add the two cups of plain yogurt,mix it well with the above ingredients.

4. add the sugar,taste it,it should not be too sweet.

5.squeeze the half lemon and mix it with the yogurt.

The lemon juice gives a very pleasant taste.
